3 Fun Spring Cookie Recipes For Your Next Tea Party

Throwing a tea party? There’s no better time for that than right now! If you’re planning on hosting a gathering – be it large or small – cookies are a staple on the table. But rather than going out and buying them, you can make them yourself using one of the following delectable and perfectly spring-inspired cookie recipes!

Jelly Thumbprints

These are so easy you’ll be making them all year long!

Roll tablespoon-sized basic ready-made sugar cookie dough into balls and place on a baking sheet lined with parchment paper. Press your thumb into each ball to make a divot in each. Fill each divot with a dollop of apricot or raspberry jam. Bake at 350° F until just starting to brown – about 15 to 18 minutes. Let cool slightly on the baking sheet, then transfer them onto a wire rack to cool off completely.

Lime Tea Cookies

Zesty, tasty, and perfect for spring!

Mix 2 teaspoons of lime juice with 1/3 cup of milk, and let stand for 5 minutes. Cream together 1/2 a cup of softened butter and 3/4 cup sugar until light and fluffy. Beat in one egg, and mix in the lime and milk mixture. Mix 1 3/4 cups of flour, 1 teaspoon of baking powder and 1/4 teaspoon of baking soda together, and blend into the creamed mixture.

Drop rounded spoonfuls of the mixture onto an ungreased cookie sheet. Bake for 8 to 10 minutes at 350° F until the edges become slightly brown. Let the cookies stand to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool off completely.

Blueberry Lemon Drops

This one may require a few more ingredients, but the end result is worth it!

Line a cookie sheet with parchment paper. In a large bowl, beat 1/4 cup softened butter and 1/4 cup of shortening, then add 1 cup of granulated sugar, 1 teaspoon of baking powder, 1 teaspoon of lemon peel, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Beat in 2 eggs and 1 tablespoon of lemon juice, then beat in 1 1/2 cups of flour and gently mix in 1/2 cup of flaked coconut.

Round the dough with teaspoons onto the cookie sheet. Put 3 blueberries in the middle of each cookie, and bake for 11 to 13 minutes at 375° F. Transfer onto a wire rack and let them stand for a few minutes.

In the meantime, mix together 1 cup of powdered sugar and 1 tablespoon lemon juice. Mix in 1/2 tablespoon of lemon juice to make a thin icing. Spread the icing on top of each cookie, and sprinkle with 1/2 cup of finely chopped pistachio nuts. Give them a few minutes to set before serving.
