Fresh Summer Salad Ideas

One of the best parts about summer is all the fresh fruits and vegetables that are ripe for the picking, and ready to be mixed into your favourite dish. Making a salad is one of the easiest, most delicious, and nutritious meals you can make this summer. Here are a few recipes to try!

Caprese Salad
Here are more information goIf you’ve got some vine-ripe tomatoes and basil in your yard, a Caprese salad is a fantastic dish to make. Simply slice your tomatoes crosswise, drizzle with olive oil, sprinkle salt and pepper, add slices of bocconcini cheese, and top with a leaf of basil. You can either serve this as slices on a flat dish, or mix it up in a traditional salad bowl. Either way, it is scrumptious!

Arugula and Fresh Berry Salad

Arugula has a wonderful strong, peppery flavour, so it goes quite well with sweet fruits and vegetables. To make this salad, toss a few leaves of arugula with 1 pint of mixed berries, 1 red onion (chopped), 1 cup of cherry tomatoes (halved), and a half cup of crumbled goat cheese. Add a strawberry or raspberry vinaigrette to taste, then serve!

Grilled Peach Salad

Grilled peaches make a wonderful addition to a summer salad. For this dish, grill your fresh peaches on the BBQ, then mix them in a bowl with onions, bacon pieces, and buttermilk dressing. Add fresh baby spinach and arugula. This dish is full of vitamins and minerals, and tastes incredible too!

Mango, Pecan and Spring Mix Salad

Mango is another fruit that packs a punch to any salad. For this recipe, dice mangos, and throw them on top of spring mix salad. Add sugared pecan halves, peppercorn, and drizzle with a berry-based vinaigrette to taste.

Caesar Salad

You just can’t go wrong with a classic Caesar salad. To make it, combine romaine lettuce, Parmesan cheese, bacon bits, croutons, and Caesar dressing. If you want to add a little protein, add some sliced chicken, salmon strips, or shrimp to the dish.
